Meet Chef Yoji Shimonishi
Originally from Long Beach, CA, Chef Yoji began his culinary career while still in high school, washing dishes and cooking in a small Japanese restaurant. Intrigued in the art of Japanese cuisine, he started as a kitchen and sushi chef at Todai in Huntington Beach for 9 years. Moving into a more gourmet setting at Roy’s Restaurants for 6 years from Newport Beach, Los Angeles, and Summerlin in Las Vegas, he quickly advanced to Executive Sushi Chef. Now as the Executive Chef and Partner for Paradise Restaurant Group under Owner-Chef Terence Fong, he has expanded his skills in Asian Fusion cuisine at Zenshin Asian Restaurant in the South Point Hotel and Island Sushi & Grill in Las Vegas, NV.
